- 12 oz rotini or penne pasta
- 1 cup cherry tomatoes, halved
- 1/2 cup sliced black or green olives
- 1/2 cup marinated artichoke hearts, chopped
- 1/2 cup roasted red peppers, sliced
- 1/2 cup cubed provolone cheese
- 1/2 cup salami or pepperoni, chopped
- 1/4 cup thinly sliced red onion
- 1/4 cup chopped fresh parsley or basil
- Italian Dressing:
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 1 garlic clove, minced
- 1 tsp Dijon mustard
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Cook pasta in salted water according to package directions. Drain and rinse under cold water.
- In a large bowl, combine pasta, tomatoes, olives, artichokes, red peppers, cheese, salami, onion, and herbs.
- In a small bowl, whisk together all dressing ingredients until well combined.
- Pour the dressing over the pasta salad and toss to coat.
- Chill in the refrigerator for at least 30 minutes before serving for best flavor.
