Description

This Easy Italian Antipasto Pasta Salad is a flavor-packed dish loaded with pasta, savory meats, cheese, olives, and vibrant veggies, tossed in a zesty Italian dressing. Perfect for potlucks, picnics, and summer meals.


Ingredients

  • 12 oz rotini or penne pasta
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sliced black or green olives
  • 1/2 cup marinated artichoke hearts, chopped
  • 1/2 cup roasted red peppers, sliced
  • 1/2 cup cubed provolone cheese
  • 1/2 cup salami or pepperoni, chopped
  • 1/4 cup thinly sliced red onion
  • 1/4 cup chopped fresh parsley or basil
  • Italian Dressing:
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 garlic clove, minced
  • 1 tsp Dijon mustard
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  • Cook pasta in salted water according to package directions. Drain and rinse under cold water.
  • In a large bowl, combine pasta, tomatoes, olives, artichokes, red peppers, cheese, salami, onion, and herbs.
  • In a small bowl, whisk together all dressing ingredients until well combined.
  • Pour the dressing over the pasta salad and toss to coat.
  • Chill in the refrigerator for at least 30 minutes before serving for best flavor.

  • This pasta salad can be prepped a day in advance.
