Ingredients

  • 1 1/2 lbs chicken breast or shrimp, cut into chunks
  • 1/4 cup olive oil
  • Juice and zest of 1 lemon
  • 2 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp fresh parsley, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Wooden or metal skewers
  • Lemon wedges (for serving)

Instructions

  • In a bowl, whisk together olive oil, lemon juice and zest, garlic, rosemary, thyme, parsley, salt, and pepper.
  • Add chicken or shrimp to the marinade and toss to coat. Cover and marinate in the fridge for at least 30 minutes (up to 2 hours).
  • If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  • Thread marinated chicken or shrimp onto skewers.
  • Preheat grill or grill pan over medium-high heat.
  • Grill skewers for 3–4 minutes per side, or until fully cooked and nicely charred.
  • Serve warm with extra lemon wedges for squeezing.

Notes

  • You can swap the herbs for what you have on hand—oregano and basil work great too.
  • Great with a side of couscous, salad, or tucked in a pita.
  • Double the marinade to use as a drizzle after grilling (boil it first if it’s touched raw meat).
