Description

This Easy Hamburger Noodle Soup is the perfect comfort food for chilly days! Packed with ground beef, vegetables, and egg noodles in a savory broth, it’s a quick and delicious one-pot meal the whole family will love.

Ingredients

Units Scale
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 4 cups beef broth
  • 2 cups water
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 2 cups egg noodles
  • Salt and pepper, to taste
  • Parsley, chopped (for garnish)

Instructions

Brown the Beef

  • In a large pot, cook the ground beef over medium heat until browned and fully cooked. Drain any excess grease and return the beef to the pot.

2. Sauté the Vegetables

  • Add the chopped onion, carrots, celery, and minced garlic to the pot. Cook for about 5 minutes, stirring occasionally, until the vegetables are tender.

3. Add Flavors and Liquids

  • Stir in the dried basil, oregano, beef broth, water, and undrained diced tomatoes. Increase the heat to bring the mixture to a boil.

4. Cook the Noodles

  • Add the egg noodles to the pot, reduce the heat to a simmer, and cook for about 10 minutes, or until the noodles are tender. Stir occasionally to prevent sticking.

5. Season and Serve

  • Season the soup with salt and pepper to taste. Garnish each serving with freshly chopped parsley for a burst of color and flavor. Serve hot and enjoy!

Notes

  • Customizations: Add a cup of frozen peas, green beans, or corn for extra veggies.
  • Make-Ahead Tip: For meal prep, cook the soup without the noodles and add them when reheating to prevent sogginess.
  • Storage: Refrigerate leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
