Refrigerated:

  • 3 large eggs

Baking & Spices:

  • 3 tbsp brown sugar
  • 2 1/4 tbsp ground cinnamon
  • 1/2 tsp vanilla extract

Bread & Baked Goods:

  • 10 slices of white sandwich bread

Dairy:

  • 5 tbsp butter
  • 1 tbsp milk

Instructions

  • Prepare the Bread:
    • Trim the crusts off the sandwich bread and flatten each slice with a rolling pin.
  • Make the Cinnamon-Sugar Mixture:
    • In a small bowl, mix together the brown sugar and 2 tbsp of the cinnamon.
  • Assemble the Roll-Ups:
    • Spread a thin layer of butter onto one side of each bread slice, then sprinkle the cinnamon-sugar mixture evenly over the buttered side. Roll up each slice tightly.
  • Prepare the Egg Mixture:
    • In a shallow bowl, whisk together the eggs, milk, vanilla extract, and remaining cinnamon.
  • Cook the Roll-Ups:
    • Heat a non-stick skillet over medium heat and melt 2 tbsp of butter. Dip each roll-up into the egg mixture, coating all sides, and place them in the skillet. Cook in batches, turning frequently, until golden brown on all sides (about 2–3 minutes per batch).
  • Serve:
    • Remove from the skillet and sprinkle with powdered sugar or drizzle with maple syrup if desired.

Notes

  • You can substitute whole-grain bread or brioche for a richer flavor.
  • Add a pinch of nutmeg to the egg mixture for extra spice.
