- 3 large eggs
Baking & Spices:
- 3 tbsp brown sugar
- 2 1/4 tbsp ground cinnamon
- 1/2 tsp vanilla extract
Bread & Baked Goods:
- 10 slices of white sandwich bread
Dairy:
- 5 tbsp butter
- 1 tbsp milk
Instructions
- Prepare the Bread:
- Trim the crusts off the sandwich bread and flatten each slice with a rolling pin.
- Make the Cinnamon-Sugar Mixture:
- In a small bowl, mix together the brown sugar and 2 tbsp of the cinnamon.
- Assemble the Roll-Ups:
- Spread a thin layer of butter onto one side of each bread slice, then sprinkle the cinnamon-sugar mixture evenly over the buttered side. Roll up each slice tightly.
- Prepare the Egg Mixture:
- In a shallow bowl, whisk together the eggs, milk, vanilla extract, and remaining cinnamon.
- Cook the Roll-Ups:
- Heat a non-stick skillet over medium heat and melt 2 tbsp of butter. Dip each roll-up into the egg mixture, coating all sides, and place them in the skillet. Cook in batches, turning frequently, until golden brown on all sides (about 2–3 minutes per batch).
- Serve:
- Remove from the skillet and sprinkle with powdered sugar or drizzle with maple syrup if desired.
