Description

  • 1 cup heavy whipping cream

  • 1/3 cup sour cream
  • 2/3 cup granulated sugar

  • 1 tbsp fresh lemon juice (optional)
  • 1/2 cup graham cracker crumbs

Instructions

Step 1: Prepare the Strawberries

  1. Cut off the stems of the strawberries and slice each in half lengthwise.
  2. Cut a small sliver off the back of each strawberry half so they sit upright.
  3. Use a small melon baller or knife to hollow out a small indent in the center of each strawberry.

Step 2: Make the Cheesecake Filling

  1. In a medium mixing bowl, beat the whipping cream with an electric mixer until stiff peaks form (about 5 minutes).
  2. In a separate bowl, combine softened cream cheese, sour cream, sugar, vanilla extract, and lemon juice. Beat until smooth and creamy.
  3. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.

Step 3: Assemble the Strawberries

  1. Transfer the cheesecake mixture to a piping bag fitted with a star tip.
  2. Pipe the filling onto each prepared strawberry half.
  3. Sprinkle graham cracker crumbs over the top for a classic cheesecake finish.

Step 4: Serve
