Description

These Easy Beef Enchiladas are a comforting classic made simple! Loaded with seasoned ground beef, cheese, and smothered in rich enchilada sauce, they’re baked to perfection and ready in under an hour. A go-to favorite for busy weeknights or casual gatherings.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 packet taco seasoning or 2 tbsp homemade seasoning
  • 1 (10 oz) can red enchilada sauce
  • 1 cup shredded cheddar or Mexican blend cheese (plus more for topping)
  • 8 flour tortillas (6- to 8-inch size)
  • Optional: sour cream, chopped cilantro, sliced olives, jalapeños for garnish

Instructions

  • Preheat oven to 375°F (190°C).
  • In a skillet, cook ground beef and onion over medium heat until beef is browned. Drain excess fat.
  • Stir in taco seasoning and half the enchilada sauce. Simmer for 2–3 minutes.
  • Spoon beef mixture down the center of each tortilla. Add some cheese, roll up, and place seam-side down in a greased 9×13-inch baking dish.
  • Pour remaining enchilada sauce over the top and sprinkle with more cheese.
  • Cover with foil and bake for 20 minutes. Remove foil and bake an additional 5–10 minutes until bubbly.
  • Garnish as desired and serve hot.

Notes

  • You can use corn tortillas for a more traditional twist.
  • Add black beans or corn to the filling for extra texture.
  • Make ahead and freeze unbaked enchiladas for future meals.
