- 1 lb ground beef
- 1 small onion, diced
- 1 packet taco seasoning or 2 tbsp homemade seasoning
- 1 (10 oz) can red enchilada sauce
- 1 cup shredded cheddar or Mexican blend cheese (plus more for topping)
- 8 flour tortillas (6- to 8-inch size)
- Optional: sour cream, chopped cilantro, sliced olives, jalapeños for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, cook ground beef and onion over medium heat until beef is browned. Drain excess fat.
- Stir in taco seasoning and half the enchilada sauce. Simmer for 2–3 minutes.
- Spoon beef mixture down the center of each tortilla. Add some cheese, roll up, and place seam-side down in a greased 9×13-inch baking dish.
- Pour remaining enchilada sauce over the top and sprinkle with more cheese.
- Cover with foil and bake for 20 minutes. Remove foil and bake an additional 5–10 minutes until bubbly.
- Garnish as desired and serve hot.
Notes
- You can use corn tortillas for a more traditional twist.
- Add black beans or corn to the filling for extra texture.
- Make ahead and freeze unbaked enchiladas for future meals.
