  • 2/3 cup white sugar
  • 1/2 cup unsalted butter, softened
  • 2 eggs
  • 1 1/2 teaspoons vanilla extract

  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk
  • 1 apple, peeled and chopped (Granny Smith or Honeycrisp recommended)
  • 1/3 cup white sugar (for apple layer)
  • 1 teaspoon ground cinnamon (for apple layer)
  • 1/2 cup powdered sugar (for glaze)
  • 1 to 3 teaspoons milk (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. Mix brown sugar and 1 teaspoon cinnamon in a small bowl and set aside.
  3. In a large bowl, cream the 2/3 cup white sugar and butter until smooth and fluffy. Beat in eggs and vanilla until combined.
  4. In another bowl, whisk together flour and baking powder. Add the flour mixture to the creamed butter mixture, alternating with the 1/2 cup milk, and mix until just combined.
  5. Pour half of the batter into the prepared loaf pan. Layer half the chopped apples over the batter, then sprinkle with half the brown sugar-cinnamon mixture.
  6. Repeat with remaining batter, apples, and cinnamon-sugar mixture.
  7. Lightly press the apples into the batter and swirl the brown sugar mixture through with a knife or spoon.
  8. Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
  9. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Mix powdered sugar and 1–3 teaspoons milk to make a glaze. Drizzle over cooled bread before serving.
