- 1/2 cup small tapioca pearls (sago)
- 1 cup coconut milk
- 2 tbsp sugar (adjust to taste)
Instructions
- Cook the tapioca pearls in boiling water until translucent, stirring occasionally to prevent sticking.
- Drain and rinse the cooked sago under cold water, then set aside.
- In a blender, puree half of the diced mango with coconut milk and sugar until smooth.
- In a bowl, combine the mango-coconut mixture, cooked sago, and the remaining mango cubes.
