Ingredients

  • 3 cups all-purpose flour
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1/4 cup granulated sugar
  • 1/2 cup warm plant-based milk (e.g., soy or almond)
  • 1/4 cup unsweetened applesauce
  • 1/4 cup vegan butter, softened
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • Raisins or chocolate chips for eyes (optional)

Instructions

  • In a small bowl, mix warm milk and sugar, then stir in yeast. Let sit for 5–10 minutes until foamy.
  • In a large bowl, combine flour, salt, applesauce, vanilla, and softened vegan butter. Add yeast mixture.
  • Knead the dough by hand or mixer for about 8–10 minutes, until smooth and elastic.
  • Cover and let rise in a warm place for 1 hour, or until doubled in size.
  • Divide dough into 8–10 equal portions. Shape each into a bunny by forming a round body and a twisted rope tail. Use raisins or chocolate chips for eyes if desired.
  • Place shaped bunnies on a baking sheet lined with parchment paper. Cover and let rise again for 30–45 minutes.
  • Preheat oven to 350°F (175°C).
  • Brush buns with plant milk and bake for 15–18 minutes, or until golden.
  • Let cool on a wire rack before serving.

Notes

  • You can add orange zest or cinnamon to the dough for extra flavor
  • Best enjoyed the same day, but can be frozen and reheated
