- 3 cups all-purpose flour
- 1 packet (2 1/4 tsp) active dry yeast
- 1/4 cup granulated sugar
- 1/2 cup warm plant-based milk (e.g., soy or almond)
- 1/4 cup unsweetened applesauce
- 1/4 cup vegan butter, softened
- 1/2 tsp salt
- 1 tsp vanilla extract
- Raisins or chocolate chips for eyes (optional)
Instructions
- In a small bowl, mix warm milk and sugar, then stir in yeast. Let sit for 5–10 minutes until foamy.
- In a large bowl, combine flour, salt, applesauce, vanilla, and softened vegan butter. Add yeast mixture.
- Knead the dough by hand or mixer for about 8–10 minutes, until smooth and elastic.
- Cover and let rise in a warm place for 1 hour, or until doubled in size.
- Divide dough into 8–10 equal portions. Shape each into a bunny by forming a round body and a twisted rope tail. Use raisins or chocolate chips for eyes if desired.
- Place shaped bunnies on a baking sheet lined with parchment paper. Cover and let rise again for 30–45 minutes.
- Preheat oven to 350°F (175°C).
- Brush buns with plant milk and bake for 15–18 minutes, or until golden.
- Let cool on a wire rack before serving.

- You can add orange zest or cinnamon to the dough for extra flavor
- Best enjoyed the same day, but can be frozen and reheated
