Description

Indulge in these creamy, cheesy Delmonico Potatoes! A classic comfort food side dish featuring tender potatoes baked with a rich cheddar cheese sauce and a touch of paprika.

Ingredients

Scale
  • 20 oz. Simply Potatoes (1 bag)
  • 3/4 cup milk (1% or any kind)
  • 3/4 cup whipping cream
  • 1 tsp kosher salt
  • 1 tsp dry mustard
  • A generous dash of pepper & nutmeg
  • 1 cup shredded sharp cheddar cheese
  • 3 tbsp butter (divided into 6 slices)
  • Paprika (for sprinkling)

Instructions

Step 1: Prepare the Casserole Dish

  • Generously butter an 8×8-inch casserole dish.
  • Spread the entire bag of Simply Potatoes evenly into the dish.

Step 2: Make the Cheese Sauce

  1. Heat a medium saucepan over medium-high heat.
  2. Combine milk, whipping cream, salt, mustard, pepper, and nutmeg.
  3. Whisk continuously until the mixture is nearly boiling.
  4. Reduce the heat and stir in the shredded cheddar cheese. Mix until the cheese is fully melted and the sauce is smooth.

Step 3: Combine Potatoes and Sauce

  • Pour the creamy cheese sauce evenly over the potatoes in the casserole dish.
  • Let the dish cool slightly before proceeding.

Step 4: Add Butter and Paprika

  • Dot the top of the casserole with butter slices.
  • Sprinkle generously with paprika for added color and flavor.

Step 5: Refrigerate

  • Cover the dish tightly with plastic wrap and refrigerate for 12 hours or overnight.

Step 6: Bake

  1. Preheat your oven to 350°F (175°C).
  2. Remove the casserole from the refrigerator and uncover.
  3. Bake for 45 minutes, or until the top is golden and bubbling.

Notes

  1. Shortcut Option: Skip the refrigeration step for a quicker version, though the overnight rest enhances flavor and texture.
  2. Customizations: Add a layer of breadcrumbs or Parmesan cheese for a crispy topping.
  3. Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
