This Crockpot Hobo Casserole is a hearty, comforting meal made with ground beef, potatoes, carrots, and a creamy mushroom sauce. It’s a perfect slow cooker dinner for busy weeknights, requiring minimal prep and delivering maximum flavor!
Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups potatoes, peeled and diced
- 2 cups carrots, sliced
- 1 (10.5 oz) can cream of mushroom soup
- 1/2 cup beef broth
- 1 cup shredded cheddar cheese (optional, for topping)
- Salt and pepper to taste
Instructions
1️⃣ Brown the beef: In a skillet over medium heat, cook the ground beef until browned. Drain excess fat. Add diced onion and minced garlic, cooking for another 2 minutes.
2️⃣ Layer the ingredients: In a crockpot, layer the potatoes at the bottom, followed by the sliced carrots. Add the cooked beef mixture on top.
3️⃣ Add soup & broth: Pour the cream of mushroom soup and beef broth over the layers. Season with salt and pepper.
4️⃣ Slow cook: Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until the potatoes and carrots are tender.
5️⃣ Optional cheese topping: Sprinkle shredded cheddar cheese on top during the last 15 minutes of cooking. Let it melt before serving.
