  • 1 1/2 lbs lean beef stew meat, trimmed
  • 4 cups low-sodium beef broth
  • 3 medium carrots, sliced
  • 3 medium potatoes, peeled and cubed
  • 2 celery stalks, chopped
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 cup frozen peas
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp cornstarch + 2 tbsp cold water (optional for thickening)

Instructions

  • Place beef, carrots, potatoes, celery, onion, and garlic into the crock pot.
  • Add beef broth, tomato paste, thyme, rosemary, bay leaf, salt, and pepper. Stir well.
  • Cover and cook on low for 8-9 hours or on high for 4-5 hours.
  • In the last 30 minutes, add peas.
  • (Optional) Mix cornstarch and water, then stir into stew to thicken.
  • Remove bay leaf, taste, and adjust seasoning before serving.
