For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup melted butter

For the Cheesecake:

  • 3 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup heavy cream

For the Caramelized Topping:

  • 1/4 cup sugar

Instructions

1️⃣ Preheat & Prepare the Crust:

  • Preheat your oven to 325°F (163°C).
  • Mix graham cracker crumbs, ¼ cup sugar, and melted butter in a bowl.
  • Press the mixture firmly into the bottom of a springform pan to form the crust. Set aside.

2️⃣ Make the Cheesecake Batter:

  • In a large bowl, beat cream cheese and 1 cup of sugar until smooth and creamy.
  • Add vanilla extract, then mix in the eggs one at a time, beating well after each addition.
  • Stir in heavy cream for a rich texture.

3️⃣ Bake the Cheesecake:

  • Pour the batter over the crust.
  • Bake for 50–60 minutes, or until the center is set but still slightly jiggly.
  • Let the cheesecake cool completely, then refrigerate for at least 4 hours (overnight is best).

4️⃣ Caramelize the Sugar Topping:

  • Before serving, sprinkle ¼ cup of sugar evenly over the top.
  • Use a kitchen torch to caramelize the sugar until golden brown and crisp.

Notes

  • If you don’t have a torch, place the cheesecake under a broiler for 1–2 minutes (watch closely!).
  • Chill for a few minutes after caramelizing for an extra crisp top.
  • Serve with fresh berries or whipped cream for an elegant touch.
