  • 8 oz pasta (penne, fettuccine, or rigatoni)
  • 1 lb boneless, skinless chicken breast or thighs, diced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1 cup canned crushed tomatoes
  • 1/2 cup tomato sauce
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese (plus more for garnish)
  • 1/4 cup chopped fresh basil (plus more for garnish)

Instructions

  • Cook pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  • While pasta cooks, heat olive oil in a large skillet over medium heat. Add diced chicken, salt, pepper, and Italian seasoning. Cook until chicken is browned and cooked through, about 6–8 minutes.
  • Add minced garlic and cook for another 1–2 minutes until fragrant.
  • Stir in crushed tomatoes and tomato sauce. Simmer for 5 minutes.
  • Reduce heat to low and stir in heavy cream, Parmesan cheese, and red pepper flakes if using. Let it simmer for another 2–3 minutes.
  • Add the cooked pasta to the sauce, tossing to coat. If the sauce is too thick, add reserved pasta water a tablespoon at a time until desired consistency.
  • Stir in chopped fresh basil.
  • Serve immediately, garnished with extra Parmesan and basil.

Notes

  • You can substitute half-and-half for a lighter sauce.
  • Add sautéed mushrooms, spinach, or sun-dried tomatoes for extra flavor and texture.
