- 8 oz pasta (penne, fettuccine, or rigatoni)
- 1 lb boneless, skinless chicken breast or thighs, diced
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 teaspoon salt

- 1 teaspoon Italian seasoning
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1 cup canned crushed tomatoes
- 1/2 cup tomato sauce
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese (plus more for garnish)
- 1/4 cup chopped fresh basil (plus more for garnish)
Instructions
- Cook pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
- While pasta cooks, heat olive oil in a large skillet over medium heat. Add diced chicken, salt, pepper, and Italian seasoning. Cook until chicken is browned and cooked through, about 6–8 minutes.
- Add minced garlic and cook for another 1–2 minutes until fragrant.
- Stir in crushed tomatoes and tomato sauce. Simmer for 5 minutes.
- Reduce heat to low and stir in heavy cream, Parmesan cheese, and red pepper flakes if using. Let it simmer for another 2–3 minutes.
- Add the cooked pasta to the sauce, tossing to coat. If the sauce is too thick, add reserved pasta water a tablespoon at a time until desired consistency.
- Stir in chopped fresh basil.
- Serve immediately, garnished with extra Parmesan and basil.
