  • 6 bone-in, skin-on chicken thighs
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 tablespoon flour
  • 2 cups cooked white rice
  • Fresh parsley, chopped (for garnish)

Instructions

  • Season chicken thighs with salt, pepper, and paprika.
  • Heat olive oil in a large skillet over medium heat. Sear chicken thighs until golden brown on both sides, about 5 minutes per side. Remove and set aside.
  • In the same skillet, add diced onion and cook until translucent. Add minced garlic and thyme; cook for 1 minute.
  • Sprinkle flour over the onions and garlic, stirring constantly.
  • Gradually pour in chicken broth, scraping the bottom of the pan to deglaze.
  • Stir in heavy cream and bring to a simmer.
  • Return chicken thighs to the skillet, cover, and cook for 25–30 minutes until chicken is fully cooked and sauce is thickened.
  • Serve chicken and sauce over cooked rice. Garnish with fresh parsley.

Notes

  • For extra flavor, add a splash of white wine before adding the chicken broth. You can also swap white rice for brown rice or quinoa for a healthier option.
