- 6 bone-in, skin-on chicken thighs
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 cup chicken broth
- 1 cup heavy cream
- 1 tablespoon flour
- 2 cups cooked white rice
- Fresh parsley, chopped (for garnish)
Instructions
- Season chicken thighs with salt, pepper, and paprika.
- Heat olive oil in a large skillet over medium heat. Sear chicken thighs until golden brown on both sides, about 5 minutes per side. Remove and set aside.
- In the same skillet, add diced onion and cook until translucent. Add minced garlic and thyme; cook for 1 minute.
- Sprinkle flour over the onions and garlic, stirring constantly.
- Gradually pour in chicken broth, scraping the bottom of the pan to deglaze.
- Stir in heavy cream and bring to a simmer.
- Return chicken thighs to the skillet, cover, and cook for 25–30 minutes until chicken is fully cooked and sauce is thickened.
- Serve chicken and sauce over cooked rice. Garnish with fresh parsley.

- For extra flavor, add a splash of white wine before adding the chicken broth. You can also swap white rice for brown rice or quinoa for a healthier option.
