Description

A rich and satisfying creamy salmon pasta dish paired with nutritious mixed greens for a balanced and flavorful meal.


Ingredients

  • 200g pasta (fettuccine or penne)
  • 2 salmon fillets (approx. 150g each), skin removed
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 200ml heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon lemon zest
  • 2 cups mixed greens (spinach, arugula, kale)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook pasta according to package instructions. Drain and set aside, reserving 1/2 cup of pasta water.
  2. Heat olive oil in a large skillet over medium heat. Add salmon fillets and cook for 3-4 minutes on each side until just cooked through. Remove from skillet and flake with a fork.
  3. In the same skillet, sauté onion and garlic until softened.
  4. Reduce heat to low, add heavy cream, and stir in Parmesan cheese until melted and smooth.
  5. Add lemon zest and season with salt and pepper to taste.
  6. Return flaked salmon to the skillet and gently combine with the sauce.
  7. Stir in mixed greens and cook until just wilted.
  8. Add cooked pasta and toss to combine, adding a bit of reserved pasta water if needed to loosen the sauce.
  9. Serve hot, garnished with fresh parsley if desired.

Notes

  • Use smoked salmon for a different flavor profile.
  • Substitute heavy cream with half-and-half for a lighter version.
  • Can add cherry tomatoes or capers for extra flavor.
