- 200g pasta (fettuccine or penne)
- 2 salmon fillets (approx. 150g each), skin removed
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 200ml heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon lemon zest
- 2 cups mixed greens (spinach, arugula, kale)
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Cook pasta according to package instructions. Drain and set aside, reserving 1/2 cup of pasta water.
- Heat olive oil in a large skillet over medium heat. Add salmon fillets and cook for 3-4 minutes on each side until just cooked through. Remove from skillet and flake with a fork.
- In the same skillet, sauté onion and garlic until softened.
- Reduce heat to low, add heavy cream, and stir in Parmesan cheese until melted and smooth.
- Add lemon zest and season with salt and pepper to taste.
- Return flaked salmon to the skillet and gently combine with the sauce.
- Stir in mixed greens and cook until just wilted.
- Add cooked pasta and toss to combine, adding a bit of reserved pasta water if needed to loosen the sauce.
- Serve hot, garnished with fresh parsley if desired.
Notes
- Use smoked salmon for a different flavor profile.
- Substitute heavy cream with half-and-half for a lighter version.
- Can add cherry tomatoes or capers for extra flavor.
