Description

  • 8 oz pasta (fettuccine, penne, or linguine)
  • 1 tablespoon olive oil
  • 2 salmon fillets (about 6 oz each), skin removed
  • Salt and pepper to taste
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 3 cloves garlic, minced
  • 1/2 cup dry white wine or chicken broth
  • 3/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • Fresh parsley, for garnish

  • Cook pasta according to package directions. Reserve 1/2 cup pasta water, then drain and set aside.
  • Heat olive oil in a large skillet over medium heat. Season salmon with salt and pepper and cook for 3–4 minutes per side until just cooked through. Remove and flake into chunks.
  • In the same skillet, add asparagus and sauté for 3–4 minutes until just tender. Add garlic and cook for 30 seconds.
  • Deglaze the pan with white wine, letting it simmer for 1–2 minutes.
  • Stir in cream and Parmesan. Simmer until slightly thickened, about 3 minutes.
  • Add cooked pasta, lemon zest, and lemon juice. Toss to combine, adding reserved pasta water if needed.
  • Gently fold in salmon pieces and heat through.
  • Serve garnished with fresh parsley.
