Scale
- :
- 8 oz pasta (fettuccine, penne, or linguine)
- 1 tablespoon olive oil
- 2 salmon fillets (about 6 oz each), skin removed
- Salt and pepper to taste
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 3 cloves garlic, minced
- 1/2 cup dry white wine or chicken broth
- 3/4 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- Fresh parsley, for garnish
Instructions
- :
- Cook pasta according to package directions. Reserve 1/2 cup pasta water, then drain and set aside.
- Heat olive oil in a large skillet over medium heat. Season salmon with salt and pepper and cook for 3–4 minutes per side until just cooked through. Remove and flake into chunks.
- In the same skillet, add asparagus and sauté for 3–4 minutes until just tender. Add garlic and cook for 30 seconds.
- Deglaze the pan with white wine, letting it simmer for 1–2 minutes.
- Stir in cream and Parmesan. Simmer until slightly thickened, about 3 minutes.
- Add cooked pasta, lemon zest, and lemon juice. Toss to combine, adding reserved pasta water if needed.
- Gently fold in salmon pieces and heat through.
- Serve garnished with fresh parsley.
Notes
- :
- Use smoked salmon for a twist in flavor and quicker prep.
- Make it lighter by substituting cream with half-and-half or Greek yogurt.
- Pairs beautifully with a crisp white wine like Sauvignon Blanc.
