  • 1 lb Italian sausage (mild or spicy), casings removed
  • 1 tbsp olive oil (if needed)
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and black pepper, to taste
  • 2 cups baby spinach or kale
  • Optional: crushed red pepper flakes for heat

Instructions

  • In a large pot or Dutch oven, cook the sausage over medium heat until browned and cooked through. Remove and set aside.
  • In the same pot, add olive oil if needed, then sauté onion, carrots, and celery until softened (about 5-6 minutes).
  • Stir in garlic and Italian seasoning, cook for 1 more minute until fragrant.
  • Return sausage to the pot, add chicken broth, and bring to a boil. Reduce to a simmer and cook for 10–15 minutes.
  • Stir in heavy cream and Parmesan cheese. Simmer until slightly thickened (5 minutes).
  • Add spinach or kale and stir until wilted. Season with salt, pepper, and red pepper flakes if using.
  • Serve hot with crusty bread or a sprinkle of extra Parmesan.

  • For a lighter version, use half-and-half instead of heavy cream.
