- 1 lb Italian sausage (mild or spicy), casings removed

- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and black pepper, to taste
- 2 cups baby spinach or kale
- Optional: crushed red pepper flakes for heat
Instructions
- In a large pot or Dutch oven, cook the sausage over medium heat until browned and cooked through. Remove and set aside.
- In the same pot, add olive oil if needed, then sauté onion, carrots, and celery until softened (about 5-6 minutes).
- Stir in garlic and Italian seasoning, cook for 1 more minute until fragrant.
- Return sausage to the pot, add chicken broth, and bring to a boil. Reduce to a simmer and cook for 10–15 minutes.
- Stir in heavy cream and Parmesan cheese. Simmer until slightly thickened (5 minutes).
- Add spinach or kale and stir until wilted. Season with salt, pepper, and red pepper flakes if using.
- Serve hot with crusty bread or a sprinkle of extra Parmesan.
