  • 4 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1/2 tsp black pepper
  • Salt to taste

Instructions

  • Cook fettuccine in a large pot of salted boiling water according to package directions. Drain and set aside.
  • In a large skillet over medium heat, heat olive oil. Add sausage, breaking it up with a spoon, and cook until browned and cooked through. Remove sausage and set aside.
  • In the same skillet, add garlic and sauté for 1 minute until fragrant.
  • Sprinkle flour over the garlic and whisk for 1–2 minutes to cook the flour.
  • Slowly add heavy cream while whisking to avoid lumps. Simmer until thickened, about 3–5 minutes.
  • Stir in Parmesan cheese, black pepper, and red pepper flakes. Adjust salt as needed.
  • Add the cooked sausage and drained pasta to the skillet. Toss to coat evenly.
  • Serve hot, garnished with chopped parsley.
