- 1 lb Italian sausage (mild or spicy, casings removed)

- 4 cloves garlic, minced
- 2 tbsp all-purpose flour
- 2 cups heavy cream
- 1 cup freshly grated Parmesan cheese
- 1/2 tsp black pepper
- Salt to taste
- 1/4 tsp crushed red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Cook fettuccine in a large pot of salted boiling water according to package directions. Drain and set aside.
- In a large skillet over medium heat, heat olive oil. Add sausage, breaking it up with a spoon, and cook until browned and cooked through. Remove sausage and set aside.
- In the same skillet, add garlic and sauté for 1 minute until fragrant.
- Sprinkle flour over the garlic and whisk for 1–2 minutes to cook the flour.
- Slowly add heavy cream while whisking to avoid lumps. Simmer until thickened, about 3–5 minutes.
- Stir in Parmesan cheese, black pepper, and red pepper flakes. Adjust salt as needed.
- Add the cooked sausage and drained pasta to the skillet. Toss to coat evenly.
- Serve hot, garnished with chopped parsley.
