Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sundried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • 1 tablespoon butter
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Sear the chicken on both sides until golden and cooked through, about 6-7 minutes per side. Remove and set aside.
  4. In the same skillet, add butter and sauté garlic until fragrant.
  5. Pour in the chicken broth and stir to deglaze the pan.
  6. Add heavy cream, Parmesan cheese, sundried tomatoes, and Italian seasoning. Stir well and bring to a simmer.
  7. Return the chicken to the skillet and spoon sauce over it. Simmer for an additional 5 minutes until heated through.
  8. Garnish with fresh parsley and serve hot.

Notes

  • You can use chicken thighs instead of breasts for juicier meat.
  • Serve with pasta, rice, or crusty bread to soak up the sauce.
  • For a lighter version, substitute half-and-half for heavy cream.
