Ingredients

Units Scale

For the Pasta:

  • 300g penne pasta

For the Salmon:

  • 2 salmon fillets, skinless
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste

For the Sauce:

  • 1 tablespoon butter
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach, chopped

Optional Garnish:

  • 1/2 teaspoon paprika

Instructions

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions. Drain and set aside.
  2. Season the Salmon:
    • In a small bowl, mix smoked paprika, garlic powder, onion powder, cayenne pepper, thyme, oregano, salt, and pepper. Rub this seasoning mixture evenly over both sides of the salmon fillets.
  3. Cook the Salmon:
    • Heat olive oil in a skillet over medium heat. Cook the salmon for 3–4 minutes per side until it is cooked through and golden. Remove the salmon from the skillet and set aside.
  4. Prepare the Creamy Sauce:
    • In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1–2 minutes until fragrant.
    • Stir in the heavy cream, scraping up any browned bits from the skillet to enhance the flavor.
    • Gradually add the grated Parmesan cheese, stirring continuously until the sauce is smooth and creamy.
  5. Add Spinach and Pasta:
    • Stir in the chopped spinach and let it wilt in the sauce for 1–2 minutes.
    • Toss the cooked penne pasta into the sauce, ensuring it’s evenly coated.
  6. Combine and Serve:
    • Flake the salmon into bite-sized pieces and gently fold it into the creamy pasta. Be careful not to break the salmon too much.
    • Garnish with a sprinkle of paprika if desired and serve warm.

Notes

  • Adjust the Heat: Modify the amount of cayenne pepper based on your spice preference.
  • Cheese Options: Substitute Parmesan with Pecorino Romano for a sharper flavor.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently on the stovetop with a splash of cream or milk.
