- 12 oz (340g) spaghetti or pasta of choice
- 2 ripe avocados, peeled and pitted
- 1 clove garlic
- 2 tbsp lemon juice
- 1/4 cup fresh basil leaves
- 2 tbsp olive oil
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (optional)
- 1 cup cherry tomatoes, halved
Instructions
- Cook pasta according to package instructions. Reserve 1/2 cup of pasta water, then drain the rest.
- In a blender or food processor, combine avocados, garlic, lemon juice, basil, olive oil, salt, and pepper. Blend until smooth and creamy.
- Mix the avocado sauce with the cooked pasta, adding reserved pasta water gradually to achieve desired consistency.
- Gently fold in the cherry tomatoes and optional Parmesan cheese.
- Serve immediately, garnished with extra basil or cheese if desired.

- Best served fresh as avocado sauce can brown over time.
