Description

  • 1/2 cup balsamic vinegar

  • 2 cloves garlic, minced
  • 2 cups beef broth
  • Salt and pepper, to taste
  • Fresh herbs (such as rosemary or thyme)

Instructions

  • Preheat Oven: Set your oven to 325°F (160°C).
  • Season Roast: Generously season the beef roast with salt and pepper.
  • Sear Roast: Heat oil in a large pot or Dutch oven over medium-high heat. Brown the roast on all sides. Remove and set aside.
  • Sauté Aromatics: In the same pot, add chopped onion and minced garlic. Cook until translucent.
  • Prepare Glaze: Stir in cranberry sauce and balsamic vinegar, scraping up browned bits from the pot for extra flavor.
  • Add Broth and Simmer: Return the seared roast to the pot, pour in beef broth, and bring to a simmer.
  • Braise: Cover the pot and transfer it to the preheated oven. Let it braise for 3-4 hours, or until the meat is tender.
