- 1 cup cranberry sauce
- 1/2 cup balsamic vinegar
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups beef broth
- Salt and pepper, to taste
- Fresh herbs (such as rosemary or thyme)
Instructions
- Preheat Oven: Set your oven to 325°F (160°C).
- Season Roast: Generously season the beef roast with salt and pepper.
- Sear Roast: Heat oil in a large pot or Dutch oven over medium-high heat. Brown the roast on all sides. Remove and set aside.
- Sauté Aromatics: In the same pot, add chopped onion and minced garlic. Cook until translucent.
- Prepare Glaze: Stir in cranberry sauce and balsamic vinegar, scraping up browned bits from the pot for extra flavor.
- Add Broth and Simmer: Return the seared roast to the pot, pour in beef broth, and bring to a simmer.
- Braise: Cover the pot and transfer it to the preheated oven. Let it braise for 3-4 hours, or until the meat is tender.
- Rest and Serve: Allow the roast to rest for a few minutes before slicing. Serve with the flavorful glaze from the pot.
