Description

A cozy and flavorful casserole featuring tender yellow squash, rich cheddar cheese, and a crispy butter cracker topping, perfect as a comforting side dish for any meal.

Ingredients

Units Scale
  • 2 pounds yellow squash, sliced
  • 1/2 cup onion, chopped
  • 2 tablespoons butter
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup crushed butter crackers (e.g., Ritz)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper, to taste

Instructions

  • Prepare squash and onion: In a large skillet, melt butter over medium heat. Add sliced squash and chopped onion. Sauté for 8–10 minutes, until tender and lightly golden.
  • Mix the filling: Remove the skillet from heat and stir in sour cream, shredded cheddar cheese, garlic powder, and onion powder. Season with salt and pepper to taste.
  • Assemble the casserole: Transfer the squash mixture into a greased baking dish, spreading it evenly. Top with crushed butter crackers.
  • Bake: Preheat oven to 350°F (175°C). Bake the casserole for 25–30 minutes, or until hot, bubbly, and the topping is golden brown.
  • Serve: Let the casserole cool for a few minutes before serving.

Notes

  • For extra flavor, mix a handful of Parmesan cheese with the crushed crackers before sprinkling on top.
  • To make ahead, prepare the squash mixture and refrigerate. Add the cracker topping just before baking.
  • Use zucchini or a mix of squash for a colorful variation.
