Description

Ingredients

  • 1 small onion, diced
  • 1 (15 oz) can corn, drained
  • 1 (15 oz) can black beans or pinto beans, drained and rinsed
  • 1 (10 oz) can diced tomatoes with green chilies (e.g., Rotel), drained
  • 1 tbsp taco seasoning
  • Salt and pepper to taste
  • 1 box (8.5 oz) cornbread mix (like Jiffy)
  • 1/3 cup milk
  • 1 egg
  • 1 cup shredded cheddar cheese, divided
  • Optional: sliced jalapeños or chopped cilantro for garnish

Instructions

  • Preheat oven to 375°F (190°C).
  • In a skillet, brown ground beef with diced onion over medium heat until fully cooked. Drain excess fat.
  • Stir in corn, beans, tomatoes, taco seasoning, salt, and pepper. Simmer for 2–3 minutes.
  • Transfer beef mixture to a greased 9×9 or 11×7 inch baking dish.
  • Sprinkle half the cheese over the beef mixture.
  • In a bowl, prepare cornbread mix with milk and egg as directed. Stir in remaining cheese.
  • Spread cornbread batter evenly over the top of the beef layer.
  • Bake for 25–30 minutes, or until cornbread is golden and cooked through.
  • Let sit 5–10 minutes before serving. Garnish with jalapeños or cilantro if desired.

  • Add a dollop of sour cream or guacamole on top before serving.
