- 1 small onion, diced
- 1 (15 oz) can corn, drained
- 1 (15 oz) can black beans or pinto beans, drained and rinsed
- 1 (10 oz) can diced tomatoes with green chilies (e.g., Rotel), drained
- 1 tbsp taco seasoning
- Salt and pepper to taste
- 1 box (8.5 oz) cornbread mix (like Jiffy)
- 1/3 cup milk
- 1 egg
- 1 cup shredded cheddar cheese, divided
- Optional: sliced jalapeños or chopped cilantro for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, brown ground beef with diced onion over medium heat until fully cooked. Drain excess fat.
- Stir in corn, beans, tomatoes, taco seasoning, salt, and pepper. Simmer for 2–3 minutes.
- Transfer beef mixture to a greased 9×9 or 11×7 inch baking dish.
- Sprinkle half the cheese over the beef mixture.
- In a bowl, prepare cornbread mix with milk and egg as directed. Stir in remaining cheese.
- Spread cornbread batter evenly over the top of the beef layer.
- Bake for 25–30 minutes, or until cornbread is golden and cooked through.
- Let sit 5–10 minutes before serving. Garnish with jalapeños or cilantro if desired.
