- 1 teaspoon vanilla extract
- 1 egg
- 1/2 cup cocoa powder
- 1/2 cup oat flour (or all-purpose flour)
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup chocolate chips or chunks (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan.
- In a bowl, whisk together blended cottage cheese, applesauce, honey, vanilla, and egg until smooth.
- Stir in cocoa powder, oat flour, baking soda, and salt until just combined.
- Fold in chocolate chips if using.
- Spread the batter evenly in the prepared pan.
- Bake for 20–25 minutes, or until the center is set and a toothpick comes out with moist crumbs.
- Cool before slicing into squares.
