  • 1 teaspoon vanilla extract
  • 1 egg
  • 1/2 cup cocoa powder
  • 1/2 cup oat flour (or all-purpose flour)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup chocolate chips or chunks (optional)

Instructions

  • Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan.
  • In a bowl, whisk together blended cottage cheese, applesauce, honey, vanilla, and egg until smooth.
  • Stir in cocoa powder, oat flour, baking soda, and salt until just combined.
  • Fold in chocolate chips if using.
  • Spread the batter evenly in the prepared pan.
  • Bake for 20–25 minutes, or until the center is set and a toothpick comes out with moist crumbs.
  • Cool before slicing into squares.
