  • Crisp Topping:
  • 3/4 cup rolled oats
  • 1/2 cup almond flour (or whole wheat flour)
  • 1/4 cup chopped pecans or walnuts
  • 2 tbsp coconut oil or melted butter
  • 2 tbsp honey or maple syrup
  • 1/2 tsp cinnamon
  • Pinch of salt

Instructions

  • Preheat Oven & Prepare Dish:
  • Preheat oven to 350°F (175°C).
  • Grease a 9-inch baking dish lightly.
  • Prepare the Apple Filling:
  • In a bowl, mix apple slices, honey, cinnamon, vanilla, lemon juice, and cornstarch.
  • Spread the mixture evenly in the baking dish.
  • Make the Cottage Cheese Layer:
  • Blend cottage cheese, honey, and vanilla until smooth.
  • Spread evenly over the apple mixture.
  • Prepare the Crisp Topping:
  • In a bowl, mix oats, flour, nuts, cinnamon, and salt.
  • Stir in melted coconut oil and honey until well combined.
  • Sprinkle over the cottage cheese layer.
  • Bake & Serve:
  • Bake for 30–35 minutes, or until the topping is golden and crispy.
  • Let cool slightly before serving.
