- 3/4 cup cottage cheese (blended until smooth)
- 1 tbsp honey or maple syrup
- 1/2 tsp vanilla extract
- Crisp Topping:
- 3/4 cup rolled oats
- 1/2 cup almond flour (or whole wheat flour)
- 1/4 cup chopped pecans or walnuts
- 2 tbsp coconut oil or melted butter
- 2 tbsp honey or maple syrup
- 1/2 tsp cinnamon
- Pinch of salt
Instructions
- Preheat Oven & Prepare Dish:
- Preheat oven to 350°F (175°C).
- Grease a 9-inch baking dish lightly.
- Prepare the Apple Filling:
- In a bowl, mix apple slices, honey, cinnamon, vanilla, lemon juice, and cornstarch.
- Spread the mixture evenly in the baking dish.
- Make the Cottage Cheese Layer:
- Blend cottage cheese, honey, and vanilla until smooth.
- Spread evenly over the apple mixture.
- Prepare the Crisp Topping:
- In a bowl, mix oats, flour, nuts, cinnamon, and salt.
- Stir in melted coconut oil and honey until well combined.
- Sprinkle over the cottage cheese layer.
- Bake & Serve:
- Bake for 30–35 minutes, or until the topping is golden and crispy.
- Let cool slightly before serving.

- Use tart apples like Granny Smith for a well-balanced flavor.
- For extra crunch, add shredded coconut or sunflower seeds to the topping.
