- 4 medium apples, peeled and thinly sliced
- 1 tablespoon lemon juice
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 2 tablespoons maple syrup or honey

- For the Cottage Cheese Layer:
- 1 cup cottage cheese
- 1 tablespoon maple syrup or honey (optional)
- 1/2 teaspoon vanilla extract
- For the Crisp Topping:
- 3/4 cup rolled oats
- 1/2 cup almond flour or whole wheat flour
- 1/4 cup chopped nuts (walnuts or pecans)
- 1/4 cup melted butter or coconut oil
- 2 tablespoons maple syrup or brown sugar
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C). Grease an 8×8-inch baking dish.
- Mix the apples with lemon juice, cinnamon, nutmeg, maple syrup, and vanilla. Spread in the bottom of the dish.
- Blend the cottage cheese with maple syrup and vanilla until smooth (or leave it slightly chunky if preferred). Spread over the apples.
- Stir together oats, flour, nuts, butter, maple syrup, and salt to make the crisp topping. Crumble evenly over the cottage cheese layer.
- Bake for 35–40 minutes, until topping is golden and apples are bubbly.
- Cool slightly before serving. Enjoy warm, optionally topped with Greek yogurt or a scoop of vanilla ice cream.
Notes
- Use firm apples like Honeycrisp or Granny Smith for best texture.
- Make it gluten-free by using certified GF oats and almond flour.
