Description

This Cottage Cheese Apple Crisp is a wholesome dessert that combines tender cinnamon apples, a golden oat crumble, and a creamy layer of protein-rich cottage cheese. It’s a lighter twist on the traditional crisp, perfect for dessert or even a cozy breakfast!

  • For the Apple Layer:
  • 4 medium apples, peeled and thinly sliced
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • For the Cottage Cheese Layer:
  • 1 cup cottage cheese
  • 1 tablespoon maple syrup or honey (optional)
  • 1/2 teaspoon vanilla extract
  • For the Crisp Topping:
  • 3/4 cup rolled oats
  • 1/2 cup almond flour or whole wheat flour
  • 1/4 cup chopped nuts (walnuts or pecans)
  • 1/4 cup melted butter or coconut oil
  • 2 tablespoons maple syrup or brown sugar
  • Pinch of salt

Instructions

  • Preheat oven to 350°F (175°C). Grease an 8×8-inch baking dish.
  • Mix the apples with lemon juice, cinnamon, nutmeg, maple syrup, and vanilla. Spread in the bottom of the dish.
  • Blend the cottage cheese with maple syrup and vanilla until smooth (or leave it slightly chunky if preferred). Spread over the apples.
  • Stir together oats, flour, nuts, butter, maple syrup, and salt to make the crisp topping. Crumble evenly over the cottage cheese layer.
  • Bake for 35–40 minutes, until topping is golden and apples are bubbly.
  • Cool slightly before serving. Enjoy warm, optionally topped with Greek yogurt or a scoop of vanilla ice cream.

Notes

  • Use firm apples like Honeycrisp or Granny Smith for best texture.
  • Make it gluten-free by using certified GF oats and almond flour.
  • Store leftovers in the fridge for up to 3 days – great reheated for breakfast!
