Coconut Yogurt Granola Cups are a healthy and delicious breakfast or snack option made with a base of baked granola shaped into cups and filled with creamy coconut yogurt and fresh fruits.

- 1 1/2 cups rolled oats
- 1/2 cup shredded coconut (unsweetened)
- 1/4 cup honey or maple syrup
- 1/4 cup coconut oil (melted)
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- 1 cup coconut yogurt
- Fresh fruits (berries, kiwi, mango, etc.) for topping
Instructions
- Preheat oven to 350°F (175°C) and grease a muffin tin.
- In a mixing bowl, combine oats, shredded coconut, honey or maple syrup, melted coconut oil, vanilla extract, and salt. Mix well.
- Divide the mixture into the muffin tin, pressing firmly to shape into cups.
- Bake for 15–18 minutes until golden brown. Let cool completely in the tin to set.
- Once cooled, carefully remove the granola cups from the tin.
- Fill each cup with coconut yogurt and top with fresh fruits of your choice.
- Serve immediately or refrigerate until ready to eat.
Notes
- Let the granola cups cool completely before removing them to avoid breaking.
- Store unfilled cups in an airtight container for up to a week.
- You can use dairy or non-dairy yogurt as per preference.
