Description

Coconut Lime Fruit Parfaits are a refreshing, tropical-inspired dessert layered with creamy coconut yogurt, zesty lime, and fresh fruits. Perfect for a light and healthy treat.


Ingredients

  • 1 cup coconut yogurt
  • 1 tbsp lime juice
  • 1 tsp lime zest
  • 2 tbsp honey or maple syrup (optional)
  • 1 cup diced mango
  • 1 cup diced pineapple
  • 1 cup sliced strawberries
  • 1/2 cup blueberries
  • 1/4 cup granola (optional)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. In a small bowl, mix coconut yogurt with lime juice, lime zest, and honey or maple syrup if using.
  2. Prepare all the fruits by washing, peeling (if needed), and chopping them into small pieces.
  3. In serving glasses or jars, layer a spoonful of the coconut lime yogurt at the bottom.
  4. Add a layer of mixed fruits on top of the yogurt.
  5. Repeat the layers until the glass is full, ending with a layer of fruit on top.
  6. Optionally, sprinkle granola on top for added crunch.
  7. Garnish with fresh mint leaves and additional lime zest if desired.
  8. Serve immediately or chill in the refrigerator for up to 2 hours before serving.
