Description

Cloud bread is a soft, fluffy, and airy bread alternative that’s low in carbs and gluten-free. It’s made primarily with eggs, cream cheese, and baking powder, making it a favorite among those following keto or gluten-free diets.


Ingredients

  • 3 large eggs, separated
  • 3 tablespoons cream cheese (or Greek yogurt)
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon salt (optional)
  • 1 tablespoon sweetener (optional, for a sweeter version)

Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Separate the egg whites and yolks into two large bowls.
  3. Beat the egg whites and cream of tartar together until stiff peaks form.
  4. In the other bowl, mix the egg yolks with cream cheese (or yogurt), salt, and sweetener (if using) until smooth.
  5. Gently fold the yolk mixture into the whipped egg whites, being careful not to deflate them.
  6. Spoon the mixture onto the prepared baking sheet, forming 6 rounds.
  7. Bake for about 25-30 minutes, or until golden brown and firm to the touch.
  8. Let cool before removing from the baking sheet. Serve as desired.

Notes

  • Store cloud bread in an airtight container in the fridge for up to 3 days.
