For the Cookie Dough:
- 3/4 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1/2 tsp baking powder

For the Cinnamon Sugar Filling:
- 3 tbsp unsalted butter, melted
- 1/2 cup light brown sugar, packed
- 1 tbsp ground cinnamon
For the Glaze:
- 1/2 cup powdered sugar
- 2–3 tsp milk
- 1/4 tsp vanilla extract
Instructions
1️⃣ Prepare the Dough:
- In a mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
- Mix in the egg and vanilla extract until combined.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
2️⃣ Roll Out the Dough:
- On a floured surface, roll the dough into a rectangle about ¼-inch thick.
3️⃣ Add the Filling:
- Brush the rolled-out dough with melted butter.
- Mix the brown sugar and cinnamon, then sprinkle evenly over the buttered dough.
4️⃣ Roll and Chill:
- Roll the dough tightly into a log.
- Wrap the log in plastic wrap and refrigerate for at least 1 hour, or until firm.
5️⃣ Slice and Bake:
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Slice the chilled dough into ¼-inch thick rounds and place on the baking sheet, spacing 2 inches apart.
- Bake for 10–12 minutes, or until the edges are lightly golden. Cool the cookies on a wire rack.

- In a small bowl, mix powdered sugar, milk, and vanilla extract until smooth. Drizzle the glaze over cooled cookies.
