Description

For the Cookie Dough:

  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 tsp baking powder

For the Cinnamon Sugar Filling:

  • 3 tbsp unsalted butter, melted
  • 1/2 cup light brown sugar, packed
  • 1 tbsp ground cinnamon

For the Glaze:

  • 1/2 cup powdered sugar
  • 23 tsp milk
  • 1/4 tsp vanilla extract

Instructions

1️⃣ Prepare the Dough:

  1. In a mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
  2. Mix in the egg and vanilla extract until combined.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.

2️⃣ Roll Out the Dough:

  • On a floured surface, roll the dough into a rectangle about ¼-inch thick.

3️⃣ Add the Filling:

  1. Brush the rolled-out dough with melted butter.
  2. Mix the brown sugar and cinnamon, then sprinkle evenly over the buttered dough.

4️⃣ Roll and Chill:

  1. Roll the dough tightly into a log.
  2. Wrap the log in plastic wrap and refrigerate for at least 1 hour, or until firm.

5️⃣ Slice and Bake:

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Slice the chilled dough into ¼-inch thick rounds and place on the baking sheet, spacing 2 inches apart.
  3. Bake for 10–12 minutes, or until the edges are lightly golden. Cool the cookies on a wire rack.

6️⃣ Prepare the Glaze:

  • In a small bowl, mix powdered sugar, milk, and vanilla extract until smooth. Drizzle the glaze over cooled cookies.

Notes

  • Chill the dough log longer for thicker cookies.
  • Add a pinch of nutmeg or cardamom to the filling for extra warmth.
  • Store cookies in an airtight container for up to 5 days.
