Ingredients
For the Dough:
- 1 cup (226g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 1/2 cups (315g) all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
For the Filling:
- 2 tablespoons (28g) unsalted butter, melted
- 1/3 cup (65g) brown sugar
- 1 1/2 teaspoons ground cinnamon
For the Glaze (Optional):
- 1/2 cup (60g) powdered sugar
- 1–2 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
1️⃣ Make the Dough: In a mixing bowl, beat softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing until combined.
2️⃣ Combine Dry Ingredients: In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the butter mixture, mixing until a dough forms.
3️⃣ Chill the Dough: Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for 30 minutes to make rolling easier.
4️⃣ Prepare the Filling: In a small bowl, mix brown sugar and cinnamon. Set aside.
5️⃣ Roll & Fill: On a floured surface, roll out the dough into a ¼-inch thick rectangle. Brush with melted butter and sprinkle the cinnamon-sugar mixture evenly over the dough.
6️⃣ Roll & Slice: Carefully roll the dough into a tight log. Wrap in plastic wrap and freeze for 15-20 minutes for easier slicing.
7️⃣ Bake the Cookies: Preheat oven to 350°F (175°C). Slice the dough into ¼-inch thick cookies and place them on a lined baking sheet. Bake for 10-12 minutes or until the edges are lightly golden.
8️⃣ Glaze (Optional): Whisk powdered sugar, milk, and vanilla extract together until smooth. Drizzle over cooled cookies and let set before serving.
Notes
- For extra softness, do not overbake—remove them when they are just lightly golden.
