- 4 boneless, skinless chicken breasts (or thighs)
- 1/4 cup fresh lime juice (about 2 limes)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh cilantro, finely chopped
- Zest of 1 lime
- Optional: extra chopped cilantro and lime wedges for garnish
Instructions
- In a large bowl or zip-top bag, whisk together lime juice, olive oil, garlic, cumin, paprika, salt, pepper, lime zest, and cilantro.
- Add chicken and toss to coat evenly. Marinate in the refrigerator for at least 30 minutes, up to 4 hours.
- Preheat a grill or skillet over medium-high heat. Remove chicken from marinade and cook for 5–7 minutes per side, or until internal temperature reaches 165°F (75°C).
- Let rest for a few minutes before slicing. Garnish with fresh cilantro and lime wedges if desired.
Notes
- Chicken thighs will stay juicier than breasts and work great with this marinade.
- Try it with cauliflower rice or as a filling for burritos and tacos.
- Add a splash of orange juice for a sweeter variation.
