- 1/4 cup fresh lime juice (about 2 limes)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 cup chopped fresh cilantro
- 1 teaspoon ground cumin

Instructions
- In a bowl or zip-top bag, combine lime juice, olive oil, garlic, cilantro, cumin, paprika, chili powder, salt, and pepper.
- Add the chicken thighs, making sure they are well coated. Marinate for at least 30 minutes (or up to 8 hours in the fridge).
- Preheat grill or skillet over medium-high heat.
- Cook chicken thighs for about 5–6 minutes per side, or until internal temperature reaches 165°F and they are golden brown.
- Let rest for 5 minutes. Garnish with fresh cilantro and lime wedges if desired.
Notes
- Swap lime juice with lemon juice for a different citrus twist.
- Make ahead by marinating the chicken overnight.
- Great served with rice, quinoa, or inside tacos.
- Can be cooked on stovetop, grill, or baked in the oven at 400°F for 20–25 minutes.
- Use bone-in thighs for even juicier results—just adjust cooking time accordingly.
