Ingredients

Units Scale

For the Batter:

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2/3 cup sugar
  • 1 1/2 tablespoons cocoa powder
  • 2 tablespoons butter, melted
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

For the Topping:

  • 1/4 cup sugar
  • 1/2 cup brown sugar
  • 1/4 teaspoon salt
  • 1 tablespoon cocoa powder
  • 1 cup boiling water

Instructions

  • Preheat the Oven:
    • Preheat oven to 350°F (175°C).
    • Grease a 1.5-quart casserole dish or an 8×8-inch square baking pan.
  • Prepare the Batter:
    • In a medium mixing bowl, whisk together flour, baking powder, salt, sugar, and cocoa powder.
    • Add melted butter, milk, and vanilla extract, stirring until smooth.
    • If using walnuts, fold them in.
    • Spread the batter evenly into the prepared baking dish.
  • Make the Topping:
    • In a separate bowl, combine sugar, brown sugar, salt, and cocoa powder.
    • Sprinkle this mixture evenly over the batter—do not stir.
  • Add the Water:
    • Carefully pour the boiling water over the sugar mixture.
    • Do not stir; leave it as is.
  • Bake:
    • Bake for 30 minutes, or until the top is mostly set.
    • The cake will rise to the top, while the pudding layer forms underneath.
  • Serve Warm:
    • Scoop into bowls and serve warm.
    • Pair with a scoop of vanilla ice cream for an extra-special treat.

Notes

  • For extra richness, use dark cocoa powder in the batter and topping.
  • Store leftovers in the refrigerator and reheat before serving to retain gooeyness.
