- 1 1/2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 cups fresh pineapple chunks
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1/2 red onion, cut into chunks
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- Salt and pepper to taste
- Wooden or metal skewers
Instructions
- In a bowl, whisk together soy sauce, honey, olive oil, garlic, ginger, salt, and pepper to make the marinade.
- Add the chicken cubes to the marinade, cover, and refrigerate for at least 1 hour.
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Preheat grill to medium-high heat.
- Thread marinated chicken, pineapple, bell peppers, and onion alternately onto the skewers.
- Grill the kabobs for 10-15 minutes, turning occasionally, until the chicken is cooked through and has a nice char.
- Serve hot with your favorite sides.
