Description

Grilled Chicken Pineapple Kabobs are a savory and sweet dish perfect for summer barbecues, featuring marinated chicken chunks and juicy pineapple grilled to perfection.


Ingredients

  • 1 1/2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1/2 red onion, cut into chunks
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • Wooden or metal skewers

Instructions

  1. In a bowl, whisk together soy sauce, honey, olive oil, garlic, ginger, salt, and pepper to make the marinade.
  2. Add the chicken cubes to the marinade, cover, and refrigerate for at least 1 hour.
  3. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  4. Preheat grill to medium-high heat.
  5. Thread marinated chicken, pineapple, bell peppers, and onion alternately onto the skewers.
  6. Grill the kabobs for 10-15 minutes, turning occasionally, until the chicken is cooked through and has a nice char.
