  • 2 lbs cooked chicken breast or thighs, shredded or cubed
  • 4 cups marinara sauce (store-bought or homemade)
  • 3 cups cooked pasta (penne or rotini) or 4 cups cubed crusty bread (like ciabatta)
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup Italian-style breadcrumbs
  • 2 tablespoons olive oil or melted butter
  • 1 teaspoon dried Italian herbs (optional)
  • Salt & pepper to taste
  • Optional garnish: fresh basil or parsley

Instructions

  • Preheat oven to 375°F (190°C).
  • In a large bowl, mix cooked chicken with marinara sauce.
  • In a greased 9×13-inch baking dish, layer cooked pasta or bread cubes. Top with the chicken mixture.
  • Sprinkle mozzarella and Parmesan cheeses evenly over the top.
