This Chicken Fajita Rice Bowl is a healthy, Tex-Mex inspired meal featuring juicy fajita-seasoned chicken, sautéed peppers and onions, and fluffy rice. It’s perfect for meal prep, quick lunches, or an easy weeknight dinner that’s as customizable as it is delicious!

- 1 lb boneless, skinless chicken breasts or thighs, sliced
- 1 tbsp olive oil
- 1 packet fajita seasoning (or 2 tbsp homemade)
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 cups cooked rice (white, brown, or cilantro lime rice)
- Optional toppings: avocado, sour cream, shredded cheese, salsa, lime wedges, cilantro
Instructions
- Heat olive oil in a skillet over medium-high heat.
- Toss chicken with fajita seasoning and add to the skillet. Cook for 5–7 minutes until browned and cooked through. Remove and set aside.
- In the same skillet, sauté bell peppers and onion for 4–5 minutes until tender-crisp.
- Assemble bowls: add a scoop of rice, top with chicken, peppers, and onions.
- Add optional toppings and serve warm.
Notes
- Make it low-carb by swapping rice for cauliflower rice.
- Use leftover grilled chicken for a shortcut version.
