Scale
- 2 boneless, skinless chicken breasts (sliced thin)
- 1 tablespoon olive oil or butter
- 2 cups broccoli florets
- 8 oz fettuccine (or pasta of choice)
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- Salt and pepper, to taste
- Optional: pinch of nutmeg, red pepper flakes, chopped parsley
Instructions
- Cook Pasta & Broccoli:
- Cook fettuccine in salted boiling water according to package instructions. Add broccoli during the last 2–3 minutes. Drain and set aside.
- Cook Chicken:
- In a large skillet, heat olive oil. Season chicken with salt and pepper and cook until golden and cooked through, about 4–5 minutes per side. Remove and set aside.
- Make Alfredo Sauce:
- In the same skillet, melt butter. Add garlic and sauté 1 minute until fragrant.
- Stir in cream and bring to a gentle simmer. Add Parmesan cheese and whisk until smooth and creamy.
- Combine:
- Return chicken and cooked pasta/broccoli to the skillet. Toss everything together over low heat until coated and warmed through.
- Serve:
- Garnish with parsley, extra cheese, or red pepper flakes if desired.
Notes
- For a lighter version, use half-and-half instead of cream.
- Add mushrooms or peas for extra veggies.
- Great for meal prep—just reheat gently with a splash of milk.
