Ingredients

  • 2 boneless, skinless chicken breasts (sliced thin)
  • 1 tablespoon olive oil or butter
  • 2 cups broccoli florets
  • 8 oz fettuccine (or pasta of choice)
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • Salt and pepper, to taste
  • Optional: pinch of nutmeg, red pepper flakes, chopped parsley

Instructions

  • Cook Pasta & Broccoli:
  • Cook fettuccine in salted boiling water according to package instructions. Add broccoli during the last 2–3 minutes. Drain and set aside.
  • Cook Chicken:
  • In a large skillet, heat olive oil. Season chicken with salt and pepper and cook until golden and cooked through, about 4–5 minutes per side. Remove and set aside.
  • Make Alfredo Sauce:
  • In the same skillet, melt butter. Add garlic and sauté 1 minute until fragrant.
  • Stir in cream and bring to a gentle simmer. Add Parmesan cheese and whisk until smooth and creamy.
  • Combine:
  • Return chicken and cooked pasta/broccoli to the skillet. Toss everything together over low heat until coated and warmed through.
  • Serve:
  • Garnish with parsley, extra cheese, or red pepper flakes if desired.

  • For a lighter version, use half-and-half instead of cream.
