  • 2 tbsp butter
  • 1 small onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups cooked shredded chicken (rotisserie or boiled)
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1/2 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 1 cup heavy cream (or whole milk)
  • For the Dumplings:
  • 1 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup whole milk
  • 2 tbsp butter, melted

Instructions

  • Make the Soup:
  • Melt butter in a large pot over medium heat.
  • Add onion, carrots, and celery; sauté until softened (about 5 minutes).
  • Stir in garlic, thyme, parsley, salt, and pepper.
  • Pour in chicken broth and bring to a simmer.
  • Add shredded chicken and heavy cream; reduce heat to low.
  • Prepare the Dumplings:
  • In a bowl, whisk together flour, baking powder, and salt.
  • Stir in milk and melted butter until just combined (do not overmix).
  • Cook the Dumplings:
  • Drop spoonfuls of dough into the simmering soup (they will expand).
  • Cover and let cook for 15 minutes without stirring.
  • Check if the dumplings are cooked through by inserting a toothpick (it should come out clean).
  • Serve & Enjoy:
  • Ladle into bowls and garnish with fresh parsley if desired.

Notes

  • For extra flavor, add a splash of lemon juice or a bay leaf while simmering.
  • Using pre-cooked rotisserie chicken saves time.
  • To thicken the soup, mix 1 tbsp cornstarch with 2 tbsp water and stir into the broth before adding dumplings.
