Instructions
- Make the Soup:
- Melt butter in a large pot over medium heat.
- Add onion, carrots, and celery; sauté until softened (about 5 minutes).
- Stir in garlic, thyme, parsley, salt, and pepper.
- Pour in chicken broth and bring to a simmer.
- Add shredded chicken and heavy cream; reduce heat to low.
- Prepare the Dumplings:
- In a bowl, whisk together flour, baking powder, and salt.
- Stir in milk and melted butter until just combined (do not overmix).
- Cook the Dumplings:
- Drop spoonfuls of dough into the simmering soup (they will expand).
- Cover and let cook for 15 minutes without stirring.
- Check if the dumplings are cooked through by inserting a toothpick (it should come out clean).
