Instructions

Step 1: Prepare the Crust

  1. Preheat your oven to 325°F (163°C).
  2. In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until well combined.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to create an even crust.

Step 2: Make the Cheesecake Filling

  1. In a large mixing bowl, beat the softened cream cheese and sugar until smooth.
  2. Add the eggs one at a time, mixing well after each addition.
  3. Stir in the vanilla extract, sour cream, and lemon zest until fully incorporated.

Step 3: Assemble the Cheesecake

  1. Pour half of the cheesecake filling over the prepared crust in the springform pan.
  2. Spread the cherry pie filling evenly over the first layer of cheesecake.
  3. Pour the remaining cheesecake filling over the cherry layer, smoothing the top.

Step 4: Bake and Cool

  1. Bake in the preheated oven for 55–60 minutes, or until the center is just set.
  2. Remove from the oven and allow to cool completely at room temperature.

Step 5: Chill and Serve

  1. Refrigerate the cheesecake for at least 4 hours, or overnight for best results.
