For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/3 cup melted butter
- 1/4 cup sugar

- 3 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1 tbsp lemon zest

Instructions
Step 1: Prepare the Crust
- Preheat your oven to 325°F (163°C).
- In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until well combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan to create an even crust.
Step 2: Make the Cheesecake Filling
- In a large mixing bowl, beat the softened cream cheese and sugar until smooth.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract, sour cream, and lemon zest until fully incorporated.
Step 3: Assemble the Cheesecake
- Pour half of the cheesecake filling over the prepared crust in the springform pan.
- Spread the cherry pie filling evenly over the first layer of cheesecake.
- Pour the remaining cheesecake filling over the cherry layer, smoothing the top.
Step 4: Bake and Cool
- Bake in the preheated oven for 55–60 minutes, or until the center is just set.
- Remove from the oven and allow to cool completely at room temperature.
Step 5: Chill and Serve
- Refrigerate the cheesecake for at least 4 hours, or overnight for best results.
- Before serving, garnish with whipped cream, lemon slices, and additional cherry pie filling, if desired.
