Ingredients

  • 1 (15 oz) can cream-style corn
  • 1 (15 oz) can whole kernel corn, drained
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/4 cup unsalted butter, melted
  • 12 jalapeños, finely chopped (seeds removed for less heat)
  • 1 1/2 cups shredded cheddar cheese
  • Optional: extra jalapeño slices or chopped green onions for garnish

Instructions

  • Preheat oven to 375°F (190°C). Grease a 9×9 inch or similar baking dish.
  • In a large bowl, mix together cornbread mix, cream-style corn, whole corn, eggs, sour cream, and melted butter until well combined.
  • Stir in chopped jalapeños and 1 cup of the shredded cheese.
  • Pour mixture into the prepared baking dish and smooth the top.
  • Sprinkle the remaining 1/2 cup of cheese over the top.
  • Bake for 35–40 minutes, or until golden brown and the center is set.
  • Let rest 10 minutes before slicing. Garnish if desired.
