Instructions
Prepare the Potatoes:
- Preheat Oven:
- Preheat your oven to 425°F (220°C).
- Slice the Potatoes:
- Wash and dry the potatoes. Place each potato between two wooden spoons or chopsticks to prevent cutting all the way through. Make thin, even slices across the potato, about 1/8 inch apart.
- Season the Potatoes:
- Place the sliced potatoes on a baking sheet. Brush with olive oil, ensuring it gets between the slices. Sprinkle with salt, pepper, and paprika.
Bake the Potatoes:
- Initial Bake:
- Bake the potatoes for 40 minutes, brushing with more olive oil halfway through.
Prepare the Topping:
- Make the Garlic Butter Mixture:
- In a small bowl, mix the melted butter, minced garlic, and fresh thyme or rosemary.
- Add Cheese and Breadcrumbs:
- Remove the potatoes from the oven. Spoon the garlic butter mixture over the potatoes, ensuring it gets into the slices. Sprinkle Parmesan cheese and panko breadcrumbs evenly over the tops.
Finish Baking:
- Crisp and Melt:
- Return the potatoes to the oven and bake for an additional 15–20 minutes, or until the edges are crispy and golden, and the cheese is melted.

- Remove from the oven and garnish with fresh parsley. Serve hot as a side dish to your favorite main course.
