Instructions
- Prep the strawberries:
- Wash and dry strawberries. Slice each in half lengthwise and use a small melon baller or spoon to gently scoop out a bit of the center, creating a “bowl” shape.
- Make the cheesecake filling:
- Beat cream cheese, powdered sugar, and vanilla until smooth and creamy. Transfer to a piping bag fitted with a star or round tip.
- Fill the strawberries:
- Pipe the cheesecake mixture into the hollowed-out strawberries, filling generously.
- Garnish:
- Sprinkle with crushed graham crackers and optional toppings like lemon zest, mini chocolate chips, or a drizzle of chocolate.
- Chill and serve:
- Refrigerate for 15–30 minutes before serving for best texture.
