- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 2 tablespoons milk
- Extra sugar and chai spice mix for rolling
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, ginger, cardamom, cloves, and nutmeg.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the egg, vanilla extract, and milk until well combined.
- Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
- In a small bowl, mix some extra sugar with a pinch of chai spice blend for rolling.
- Scoop tablespoon-sized balls of dough and roll them in the sugar-spice mixture.
- Place on prepared baking sheets about 2 inches apart and slightly flatten each ball.
- Bake for 8–10 minutes, or until the edges are lightly golden.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- Store cookies in an airtight container for up to a week.
- Adjust spice levels to taste.
- For a crispier cookie, bake a minute or two longer.
