Units Scale
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 tablespoons milk
  • Extra sugar and chai spice mix for rolling

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, ginger, cardamom, cloves, and nutmeg.
  3. In a large bowl, cream together the butter and sugar until light and fluffy.
  4. Beat in the egg, vanilla extract, and milk until well combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
  6. In a small bowl, mix some extra sugar with a pinch of chai spice blend for rolling.
  7. Scoop tablespoon-sized balls of dough and roll them in the sugar-spice mixture.
  8. Place on prepared baking sheets about 2 inches apart and slightly flatten each ball.
  9. Bake for 8–10 minutes, or until the edges are lightly golden.
  10. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
