Description

Cauliflower steaks are thick slices of cauliflower that are seasoned and roasted or grilled until tender and golden. They make a hearty, plant-based main dish or side.


Ingredients

  • 1 large head of cauliflower
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Remove the outer leaves from the cauliflower and trim the stem while keeping the core intact.
  3. Slice the cauliflower into 3/4-inch thick steaks. You should get 2–3 steaks from the center; the rest may fall into florets.
  4. Place the cauliflower steaks on the prepared baking sheet.
  5. In a small bowl, mix olive oil, garlic powder, smoked paprika, salt, and pepper.
  6. Brush both sides of the cauliflower steaks with the seasoned oil mixture.
  7. Roast for 20–25 minutes, flipping halfway through, until the steaks are tender and golden brown.
  8. Garnish with chopped fresh parsley if desired and serve warm.

Notes

  • Use the leftover florets for another recipe or roast them alongside the steaks.
  • Grill instead of roasting for a smoky flavor.
  • Serve with a sauce like chimichurri or tahini for added flavor.
