Description
Cauliflower steaks are thick slices of cauliflower that are seasoned and roasted or grilled until tender and golden. They make a hearty, plant-based main dish or side.

- 1 large head of cauliflower
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt, to taste
- Black pepper, to taste
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Remove the outer leaves from the cauliflower and trim the stem while keeping the core intact.
- Slice the cauliflower into 3/4-inch thick steaks. You should get 2–3 steaks from the center; the rest may fall into florets.
- Place the cauliflower steaks on the prepared baking sheet.
- In a small bowl, mix olive oil, garlic powder, smoked paprika, salt, and pepper.
- Brush both sides of the cauliflower steaks with the seasoned oil mixture.
- Roast for 20–25 minutes, flipping halfway through, until the steaks are tender and golden brown.
- Garnish with chopped fresh parsley if desired and serve warm.
Notes
- Use the leftover florets for another recipe or roast them alongside the steaks.
- Grill instead of roasting for a smoky flavor.
- Serve with a sauce like chimichurri or tahini for added flavor.
