Description

Carrot bacon is a crispy, smoky, and savory vegan alternative to traditional bacon, made from thinly sliced carrots and a flavorful marinade.


Ingredients

  • 2 large carrots, peeled
  • 1 tbsp soy sauce or tamari
  • 1 tbsp maple syrup
  • 1 tbsp olive oil
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp liquid smoke (optional for extra smokiness)
  • Pinch of black pepper

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Using a vegetable peeler or mandoline, slice the carrots into thin strips.
  3. In a bowl, whisk together soy sauce, maple syrup, olive oil, smoked paprika, garlic powder, onion powder, liquid smoke, and black pepper.
  4. Toss carrot strips in the marinade until well coated. Let them sit for 10–15 minutes to absorb the flavor.
  5. Place the carrot strips in a single layer on the prepared baking sheet without overlapping.
  6. Bake for 15–20 minutes, flipping halfway through, until crisp. Keep an eye on them to avoid burning.
  7. Let cool slightly before serving; they will crisp up more as they cool.

Notes

  • Use a mandoline for consistent thin slices.
  • Adjust seasoning to taste—add chili flakes for heat or use coconut aminos for a soy-free version.
  • Carrot bacon can be stored in an airtight container for up to 3 days.
