Carrot bacon is a crispy, smoky, and savory vegan alternative to traditional bacon, made from thinly sliced carrots and a flavorful marinade.

- 2 large carrots, peeled
- 1 tbsp soy sauce or tamari
- 1 tbsp maple syrup
- 1 tbsp olive oil
- 1/2 tsp smoked paprika
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp liquid smoke (optional for extra smokiness)
- Pinch of black pepper
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Using a vegetable peeler or mandoline, slice the carrots into thin strips.
- In a bowl, whisk together soy sauce, maple syrup, olive oil, smoked paprika, garlic powder, onion powder, liquid smoke, and black pepper.
- Toss carrot strips in the marinade until well coated. Let them sit for 10–15 minutes to absorb the flavor.
- Place the carrot strips in a single layer on the prepared baking sheet without overlapping.
- Bake for 15–20 minutes, flipping halfway through, until crisp. Keep an eye on them to avoid burning.
- Let cool slightly before serving; they will crisp up more as they cool.
Notes
- Use a mandoline for consistent thin slices.
- Adjust seasoning to taste—add chili flakes for heat or use coconut aminos for a soy-free version.
- Carrot bacon can be stored in an airtight container for up to 3 days.
