  • 1 tablespoon dried butterfly pea flowers (or 2 butterfly pea tea bags)
  • 1/4 cup honey, agave syrup, or simple syrup (adjust to taste)
  • 1/2 cup fresh lemon juice (about 3-4 lemons)
  • 2 more cups cold water or sparkling water
  • Ice cubes
  • Lemon slices and mint for garnish (optional)

Instructions

  • Bring 2 cups of water to a boil. Add butterfly pea flowers and steep for 5–10 minutes until the water turns deep blue.
  • Strain the tea and let it cool to room temperature.
  • In a pitcher, mix the lemon juice and sweetener until combined.
  • Add the cooled butterfly pea tea. Watch the color change to a purple-pink hue as the lemon juice reacts!
  • Stir in 2 cups of cold water or sparkling water for a fizzy version.
  • Serve over ice with lemon slices and mint if desired.
