Ingredients

Units Scale

Marinade

  • 2 tsp chipotle powder
  • 1 bunch fresh cilantro, chopped
  • 8 cloves garlic, minced
  • 1 tsp garlic powder
  • 1/2 lime, juiced
  • 1 tsp onion powder
  • 1 tsp oregano
  • 1 7 oz can chipotle peppers in adobo sauce
  • 1/4 cup honey
  • 1 tsp chili powder
  • 1/2 tsp black pepper
  • 2 tsp salt
  • 1 tsp cumin
  • 1/4 cup extra virgin olive oil
  • 1/4 cup red wine vinegar

Meat

  • 1.5 lbs steak (sirloin, flank, or skirt steak works best)

Instructions

Step 1: Prepare the Marinade

  1. In a blender or food processor, combine chipotle powder, cilantro, minced garlic, garlic powder, lime juice, onion powder, oregano, chipotle peppers in adobo sauce, honey, chili powder, black pepper, salt, cumin, olive oil, and red wine vinegar.
  2. Blend until smooth to create a rich and flavorful marinade.

Step 2: Marinate the Steak

  1. Place the steak in a large resealable plastic bag or a shallow dish.
  2. Pour the marinade over the steak, ensuring it is fully coated.
  3. Cover and refrigerate for at least 1 hour, or up to 24 hours for maximum flavor.

Step 3: Cook the Steak

  1. Preheat a grill, grill pan, or skillet over medium-high heat.
  2. Remove the steak from the marinade, allowing any excess to drip off.
  3. Grill or sear the steak for 3–4 minutes per side for medium-rare, or adjust the cook time based on your preferred doneness.
  4. Let the steak rest for 5 minutes before slicing it thinly against the grain.

Step 4: Assemble Your Bowl

  1. Serve the sliced steak over a bed of rice, beans, or lettuce.
  2. Add your favorite toppings like guacamole, salsa, shredded cheese, sour cream, or roasted vegetables.

Notes

  • If you prefer chicken, swap the steak for boneless, skinless chicken breasts or thighs and follow the same steps.
  • For a spicier marinade, add extra chipotle powder or fresh jalapeño slices to the blender.
  • Leftover steak can be stored in an airtight container in the fridge for up to 3 days.
